WHERE IT CAME FROM.

Known in Hungarian as kürtőskalács, pronounced roughly as kur-tush-kah-lach, Chimney Cake comes from Transylvania, the Hungarian-speaking region that is now part of Romania. The name breaks down: kürtő means stovepipe, kalács means sweet bread. Steam rises from the centre when it comes off the spit. It looks exactly like a chimney. The name stuck.

The first written record of kürtőskalács dates back to 1679, Wikipedia though according to legend it goes back even further, to the 13th century, when Székely women first baked it to feed their village during a Mongol siege. Matador Network Whether or not that story holds, what’s not in dispute is this: for centuries, this pastry was the kind of thing you made for weddings, christenings, and holidays. Special occasions only. The dough took time and skill, and the result was worth it.

By the 19th century it was baked all across the Hungarian Kingdom, Hungarian Conservative and eventually it found its way to street markets, holiday festivals, and the hands of tourists who had no idea what they were holding but knew immediately they wanted more. In 2015, Hungary inscribed kürtőskalács into its official list of Hungarikums Hungarian Conservative , a designation reserved for things considered uniquely and irreplaceably Hungarian. That’s the kind of cultural weight this pastry carries.

It has been doing this for over 300 years. It is not a trend.

WHAT IT ACTUALLY IS.

Here’s what happens when a chimney cake is made the right way.

A yeast dough is mixed by hand, left to proof, then rolled out and cut into long strips. Each strip gets wrapped in a tight spiral around a dowel. The whole thing gets rolled in sugar traditionally, then goes into the oven, or over an open fire, the traditional way, and turns slowly while the heat does its work.

The outside caramelizes. That’s the moment.

The sugar catches on the heat and builds into a crust that is crispy and golden and slightly sticky in the best possible way. Meanwhile the inside stays soft. Warm. Pull-apart layers of dough that give when you tear into them. It tastes something like brioche, but with a firmer texture that’s pleasantly chewy, Gastro Obscura and the caramelized exterior is in a completely different category from anything you’ve had on top of a regular pastry.

You eat it by tearing off the spiral strips from the outside. There’s no wrong way to do it. Most people are quiet while they’re eating, which tells you everything.

WHY MOST PEOPLE IN NORTH AMERICA HAVE NEVER HAD ONE.

This is the part that still surprises people.

Chimney cake has been a staple of Hungarian and Eastern European street food culture for centuries. Millions of people grew up with it. Tourists who discovered it in Budapest or Prague came home talking about it. And yet, for most of North America, it has remained something you had to travel for.

When Anett Kane moved from Hungary to North America, this is the gap she felt. She knew exactly what a proper chimney cake was supposed to taste like. She also knew it wasn’t here. Not the real thing. Not made the way she remembered.

The sweet chimney can get finished with Budapest Bakeshop’s proprietary homemade cheesecake icing, developed in-house, designed to sit against that caramelized crust in a way that feels like it was always supposed to be there. It was not a small task to get right. It is very right.

Then there’s the Famous Savoury Chimney Sandwich. Same dough. Same crust. Packed with warm savoury fillings and built for lunch. Budapest Bakeshop created this. Nobody had done it before. The first Budapest Bakeshop opened in Niagara-on-the-Lake in 2019. It had lines before it ever unlocked the door. Every location since has opened the same way.
