Meet the Collingwood owners:
Marcello Sperandeo & Bronwen Parry

Marcello Sperandeo and Bronwen Parry have lived in Simcoe County for over 16 years. They know this community. They know the people in it. And when it came time to bring Budapest Bakeshop to a new city, Collingwood wasn’t a market they researched. It was home.

IT STARTED AT A FAMILY TABLE.

Bronwen didn’t discover chimney cakes through a food blog or a restaurant visit. She grew up
eating them.

Her Hungarian grandmother brought kürtőskalács to family gatherings for as long as Bronwen can remember. That warm caramelized crust. The soft layered inside. The way the whole room reacts when something that good comes out. It wasn’t a novelty. It was just part of what those gatherings felt like.

When Bronwen and Marcello came across Budapest Bakeshop and tasted what Todd and Anett had built around that same tradition, it clicked immediately. This wasn’t a new food trend to them. It was something deeply familiar, taken somewhere even better.

There’s a difference between opening a business in a community and opening one for it. Marcello and Bronwen are firmly in the second camp.

After 16 years in Simcoe County, they’re not coming in as outsiders with a concept. They’re coming in as neighbours with something their neighbours are going to love. They know the streets. They know the people. They already have friendships woven into the fabric of this town, and they can’t wait to bring those same people through their doors.

That’s not a marketing line. That’s the whole reason they chose Collingwood.

WHAT IS BUDAPEST BAKESHOP, EXACTLY?


If you haven’t been to the Niagara-on-the-Lake or Port Dalhousie locations yet, here’s what you need to know.

Budapest Bakeshop is built around one product done extraordinarily well: the chimney cake. Known in Hungarian as kürtőskalács, it’s a traditional pastry that’s been part of Hungarian culture for over 300 years. Hand-rolled dough, wrapped around a cylinder, slow-roasted until the outside is perfectly caramelized and the inside stays soft and warm. Then it gets filled. Or topped. Or both.

And then there’s the Famous Savoury Chimney Sandwich, which Budapest Bakeshop created and nobody else has done. The same dough, taken somewhere completely different. Warm and crispy on the outside, packed with savoury fillings. People who come in for the sweet chimneys leave talking about the savoury ones. People who come in for lunch end up coming back on the weekend with their families.

The original location in Niagara-on-the-Lake had lines out the door before it ever opened. Port Dalhousie was the same story. Every location Budapest Bakeshop has opened has sold out from day one.

Collingwood is next.

“We chose Budapest Bakeshop because it’s about more than just great food,” Marcello and Bronwen have said. “It’s about creating a space where people feel welcome and connected. Being able to bring something special to Collingwood and serve this community means everything to us. We hope to give more people that same reaction that we had the first time we tried these sandwiches and desserts.”

Budapest Bakeshop is a Canadian chimney cake franchise founded in 2019 by Anett and Todd Kane in historic Niagara-on-the-Lake, Ontario. Every location is independently owned and operated by franchisees who share the same commitment to quality, craft, and community. All chimney cakes are made fresh daily, by hand, using the same traditional Hungarian recipe that started it all.

Warm, crispy on the outside, soft on the inside, and completely unlike anything else in North America.

What flavours does Budapest Bakeshop have?

Budapest Bakeshop offers both sweet and savoury chimney cakes. Permanent sweet staples include Cinnamon Sugar and Nutella Walnut. On the savoury side, the Classic Aged Cheddar Chimney Sandwich is always available. Seasonal specials rotate regularly so there is always something new to try.

Are Budapest Bakeshop chimney cakes made fresh daily?

Yes. Every chimney cake is hand-rolled and baked fresh in small batches throughout the day, every single day. Nothing is frozen or reheated. What you order was made today, and it holds up beautifully whether you eat it warm in-store or take it with you.

Does Budapest Bakeshop sell out?
Yes, and regularly. Because everything is made fresh in small batches, popular items do sell out, especially from May through September. Calling ahead or ordering online is strongly recommended during busy periods.
